I also enjoy seeing what creative dishes you’re whipping up on any given night. I don’t consider myself a vegan because I still eat some seafood but 95% of my diet -my wife as well- is plant-based. I was a pescatarian for over 45 years but decided to give up seafood, eggs and dairy 9 years ago and only reintroduced limited seafood consumption a year ago because I felt it was what I needed to do to help maintain healthy vitamin B-12 levels…pernicious anemia is a condition that runs in my family; my father had to be given weekly B-12 injections for the last 30 years of his life. So far, my levels have been more than adequate and my Dr thinks I’d still be ok even if I didn’t eat the 2x a week serving of seafood. I enjoy the daily challenge of creating tasty dishes without dairy, eggs or meat. When I gave up dairy my eczema and arthritic joint pain diminished to almost nothing, so those foods will never be introduced back into my diet.
