Posting early because of working late.Cherry gazpacho. It has cucumbers, red bell pepper, garlic, sherry vinegar and thinly sliced mint leaves.
That's prob'ly all I'll have because of this humidity and heat, but if I get hungry when it cools off, I might cook some salmon with brown sugar. RG recipe.
Cherry kombucha.
p.s. I'm so glad I bought a countertop ice machine.

(36,627 posts)I cooked a corned beef in the sous vide last night that's resting in the refrigerator this morning. I'll make a Reuben sandwich for myself, some tomato soup, and a green salad. K will have some beef, leftover mac and cheese, and salad, but she's not a fan of sauerkraut, so I'll fry her some fresh cabbage instead.
She's the kind of shopper who hits the grocery stores after holidays and buys specialty cuts of meat marked down for quick sale, then freezes them. We've got a couple hams in the freezer and at least one turkey breast, lol. But we'll make short work of that corned brisket!
Rereading this response reminds me how fortunate K and I are to have freezers full of food that we can prepare and eat in the safety of our home. So many people, all over the world, have so much less. In Gaza starving families risk death for a bag of rice. Much of the world is wracked by famine and food insecurity. Children go to bed hungry, even here. We are so fortunate.

(21,288 posts)My daughter gave me a cherry tomato plant for Mother's Day. I get a few tomatoes every few days. I started some sprouts Mon. that were ready today, so I had a tasty salad, and a slice of avocado toast.

(1,484 posts)After attending the Good Trouble protest we decided to have dinner at a nearby Mexican Restaurant that had a nice selection of plant-based choices. I started with a cup of delicious black bean soup then had a quesadilla filled with grilled mushrooms, onions, red and green bell peppers, sliced chayote (squash similar to zucchini) and melted vegan cheese, everything perfectly spiced. Cheers!🍻

(1,484 posts)I also enjoy seeing what creative dishes youre whipping up on any given night. I dont consider myself a vegan because I still eat some seafood but 95% of my diet -my wife as well- is plant-based. I was a pescatarian for over 45 years but decided to give up seafood, eggs and dairy 9 years ago and only reintroduced limited seafood consumption a year ago because I felt it was what I needed to do to help maintain healthy vitamin B-12 levels pernicious anemia is a condition that runs in my family; my father had to be given weekly B-12 injections for the last 30 years of his life. So far, my levels have been more than adequate and my Dr thinks Id still be ok even if I didnt eat the 2x a week serving of seafood. I enjoy the daily challenge of creating tasty dishes without dairy, eggs or meat. When I gave up dairy my eczema and arthritic joint pain diminished to almost nothing, so those foods will never be introduced back into my diet.

(84 posts)Grilled swordfish, roasted cauliflower (with garlic and parmesan cheese) and dark chocolate covered almonds.
YUM! It finally cooled off today and the cauliflower was glorious.
