1. For anybody cooking for one, or just a couple of people, and who like Mexican food:

Thaw (for a 2-3 days in the fridge) a bone in turkey breast (of get one of those boneless turkey roasts).

Get out the old crock pot/slow cooker. Toss in a large can of green chili enchilada sauce, some chopped onions, cilantro if you like it, and some mild green chili, seeded and chopped.

Let that all cook for a few hours while you kick back, munch tortilla chips, salsa, guac if you like that. Steam some rice if you want, with some cumin and a little garlic. The sauce is great on the rice.

RELAX.

Dinner will be easy and clean up won't wear you out.

This is also a good Thanksgiving menu if you want picnic. Make ahead, keep in the fridge till you go out, and heat everything on a camp stove. Dine outside, like the pilgrims did, and enjoy indigenous flavors of this continent. We have had some great T-Day picnics with this method.

I have found that getting out of the house when I may have been sad at not having a big family around for the holiday can be a really fun experience.
