My "Home Alone" Thanksgiving Dinner...

Boneless turkey breast, stove top stuffing, corn, instant mashed potatoes, yeast rolls, green beans mixed with cream of mushroom soup and crispy onion thingies...two pies...
and I'm eating for one...maybe a couple of other items (deviled eggs if my grocery deli has them)
turkey gravy and whipped topping...no cranberry sauce...

Yesterday

Thaw (for a 2-3 days in the fridge) a bone in turkey breast (of get one of those boneless turkey roasts).

Get out the old crock pot/slow cooker. Toss in a large can of green chili enchilada sauce, some chopped onions, cilantro if you like it, and some mild green chili, seeded and chopped.

Let that all cook for a few hours while you kick back, munch tortilla chips, salsa, guac if you like that. Steam some rice if you want, with some cumin and a little garlic. The sauce is great on the rice.

RELAX.

Dinner will be easy and clean up won't wear you out.

This is also a good Thanksgiving menu if you want picnic. Make ahead, keep in the fridge till you go out, and heat everything on a camp stove. Dine outside, like the pilgrims did, and enjoy indigenous flavors of this continent. We have had some great T-Day picnics with this method.

I have found that getting out of the house when I may have been sad at not having a big family around for the holiday can be a really fun experience.

3. That sounds good...I've never married, no kids and my one (of three) remaining sisters doesn't speak to me...

So I'm used to being by myself, and quite like it...sis and I had a falling out a few years back over my disabled mother's care and her eventual passing and burial, In fact I have no idea where she was buried...

being estranged is hard, but then, so is spending time with people who can no longer relate to where we stand.

It is in the little town where she last lived in assisted living and a nursing facility...Not far from where I currently live...I can go visit her and leave some flowers now...Thanks again...

I will sometimes cook a full meal as I might otherwise, with all the fixings, and just freeze most of it. You'd be surprised at how much tastes just fine when frozen in airtight Pyrex containers sufficient for single meals. Even those foods considered "non-freezable" taste pretty good. I probably would refrigerate the deviled eggs, however. LOL

Thanksgiving blasphemy, but I prefer the taste of chicken. Only item I'll add to your menu is maybe a key lime pie.

Kids are making a rare visit this year, but small (food) is beautiful as well.

I remember those three-family Italian-American Thanksgiving, Christmas and Easter feasts. WOW.

Takes a lot less for one, or even three.

I just cut up some (cooked) turkey breast and made a turkey pot pie less the pie. And the pot.
It's illegal in this backwater county.

I remember feeling incredibly lonely on Thanksgiving in graduate school. I used to hang out in the library hoping someone would invite me somewhere. One year someone actually did. It was a hyper Christian religious gathering, which isn’t my thing, but it beat staying in the dorm. Unfortunately, there was no way to cook in the dorm and they didn’t serve food on the holidays, so I probably just had a Cup ‘o Noodle soup for Thanksgiving. It can be hard when you don’t have family nearby.

I don't care much for turkey, never have--- at most ate it once a year,
when that was on someone else's dinner menu...

For my 'non-traditional' Thanksgiving dinner for one, in more recent years,
I favor BBQ chicken thighs, jalapeno poppers, baked beans, fried coated okra
and other such 'out of the box' things, in generous quantities!
