4. I was thinking maybe the Roter Stettiner.

That one dates from Germany in the late 1500s, which appeals to my sense of whimsy, as well as seeming like a bit of a tribute to my father, who was a German teacher for decades, and might not be around much longer. I know he plans to be cremated, and have his ashes 'split up' among his survivors to do with as they see fit. He might like the idea of being 'planted' with an apple tree.
