I had a frozen 1/2 chicken that I defrosted and had to use. [View all]

Here's what I made.

1/2 of a white onion
handful of fresh parsley (homegrown)
2 celery stalks fine chopped.

Sautied above in a little olive oil, pepper. salt. Italian seasoning (liberal shakes)

cooked down.

Added the chicken chunks a 12 0z o jarred chicken gravy, 1/2 jar of water (I wish I'd had a 2nd jar of gravy)._

Cooking undercover, med low. Meanwhile cooking some homegrown potato's for smashing and creamed spinnich as a sider dish.

Plan to finish the chicken with dried cranberries and pecan bits. Maybe a bit of sour cream at the end.

Will let you know if I like, or at least survived.
