COCONUT CANDY



1 1/2 cups brown sugar
1 Tbsp. corn syrup
1/2 cup coconut milk
1/2 tsp. vanilla
1/2 cup raisins, finely chopped
1/2 cup dates chopped
1 cup fresh grated coconut

Boil sugar, corn syrup, and coconut milk together until a small amount
of syrup forms a soft ball in cold water (235°F.) Cool. Add vanilla and
beat until creamy. Add fruits and coconut. Shape into a roll about 1 1/2
inches in diameter. Wrap in waxed paper. Chill and cut in slices.

COCONUT APPLE BETTY



4 cups sliced apples
1 cup soft bread crumbs
1 cup coconut shredded
4 Tbsp. butter
1/2 cup brown sugar firmly packed
Dash of salt
1/2 tsp. cinnamon


Arrange 2 cups of the apples on bottom of greased baking dish.
Sprinkle with 1/2 cup of the bread crumbs and 1/3 cup of the coconut.
Combine brown sugar, salt, and cinnamon, and sprinkle half of mixture
over the coconut. Dot with 2 tablespoons of the butter. Repeat.
Sprinkle remaining 1/3 cup of coconut over top. Cover and bake in
moderate oven (350°) 35 minutes. Uncover and bake 10 minutes longer

COCONUT COOKIES



1/2 cup shortening
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 cup enriched flour
1 tsp. baking powder
1 tsp. soda
1/4 tsp. salt
1 cup rolled oats
1 cup grated fresh coconut

Cream shortening and sugars Add egg and beat thoroughly.
Sift dry ingredients together and add to the creamed mixture.
Add rolled oats and coconut. Drop by teaspoonfuls on oiled
cookie sheet and bake at 250° far 10 minutes or until golden
brown.
