Yup It's Chocolate Monday Again!! Fudgy Bites/Coconut Balls 🌞 [View all]

FUDGY PROTEIN BITES



PREPARATION TIME
1 Hour 5 minutes

The protein powder in these chocolatey bites gives a wonderfully chewy texture and the
way the ingredients naturally settle means the chia and rice malt syrup form a caramel-like
base on the bottom, followed by a fudgy centre covered in chocolate. Seriously good stuff.

SERVES 25

1 1/2 cups (375 ml) *Basic Raw Chocolate
1/2 cup (80 g) chia seeds
1/4 cup (40 g) maca powder, optional
(if not using maca, add a little extra protein powder)
1/4 cup (75 g) vanilla protein powder

1. Combine all ingredients and pour immediately into silicon moulds
or cupcake cases (mini or standard). Place in the fridge or freezer for
at least 1 hour to harden.


TRICKY TIP
Add 1/4 teaspoon vanilla powder if you're using a natural protein powder.

COCONUT BALLS



MAKES 14

PREPARATION TIME
1 Hour 3O minutes

COOKING TIME
5 minutes

FILLING

2 1/2 cups (190 g) unsweetened shredded coconut
2 tablespoons rice malt syrup
2 tablespoons coconut oil, melted
1/4 cup (60 ml) coconut milk
1 cup (250 ml) Basic Raw Chocolate or 1 cup (225 g) store-
bought dark (85% cocoa) chocolate


1, Line a baking tray with baking paper. Add all the filling ingredients
to the food processor. Pulse until mixture comes together but still
has texture. Roll tablespoons of the mixture into round balls and
freeze for at least an hour.

2. Meanwhile make Basic Raw Chocolate or melt store-bought chocolate
over a double boiler, being careful not to seize the chocolate. Remove
the coconut balls from the freezer and roll them in the meited
chocolate so they are completely coated.

3. Place balls on a tray and sit in the fridge to set before serving

TRICKY TIP
These balls will require refrigeration.

*BASIC RAW CHOCOLAT]E[/b

Makes 1 1/2 cups (320 ml)
Cooking Time 5 minutes

1 cup (225g) raw cacao butter ,buttons or shavings
1/2 cup (30 g) raw cacao powder
-2 teaspoons granulated stevia or 1-2 tablespoons
rice malt syrup
2 pinches of sea salt

1. Melt the cacao butter gently, stirring until dissolved.
Blend/mix with the rest of the ingredients until
smooth/combined.
