10. Stuffed Peppers

I parboiled a couple red bell peppers. I made a stuffing by steam-frying chopped onions, celery, carrots and garlic in evoo and veggie broth until they sweated. I added cooked red quinoa and Wegman’s plant-based sausage crumbles and chopped fresh oregano, basil and parsley. I stuffed the peppers and baked them for about 45 minutes. Cheers!🥂
