I split up the omelettes with tomatoes, avocados, mushrooms, or other diced veggies. Sometimes it's egg with lettuce and normal salad ingredients. I've gotten use to not using salad dressing. Even though I could make some olive oil based dressings I really haven't missed it. Sometimes at dinner I will make a dressing though.

For years we have been eating what most would consider fairly healthy meals. We started using olive oil a long time back instead of all the "bad" oils. Bake or saute instead deep fry. So a lot of the stuff we do now isn't terribly far from what we ate before. My wife has had problems with arthritis and I had gut issues. I'm not sure what the main difference is now. But both of us has had a lot fewer problems. It may be the added ingredients to a lot of the food and spices we ate before. The beans. peas, rice, etc we stopped eating. Stopped buying breaded fish and using wheat flour to bread stuff. Don't know what it was that made the difference. But something if not all the above helped.
