My focus is food. I have been experimenting with foods. So far I have found Okra to be a way to help swallow different foods. Some people hate the sliminess of Okra, but for us recovering from cancer of the neck and tongue, it is a blessing.
I fry my Okra with a Panko and flour coating. I dip the Okra in catsup to add moisture. Frying masks the sliminess.
Two other foods I found to be perfect. I skinned and roasted some Eggplant. I made a Tahini sauce (Tahini, lemon juice, garlic powder, and water. It is a marriage made in heaven. I am so glad I can handle Tahini. That opens up a whole new world for me.
When I need some greens, I grab some leaf lettuce and eat as is. I add a bit of salt to counter any bitterness. A catsup and mayo dip works well, and it doesn't need much.
Roasted chickpeas are terrific, and a good source of protein. Corn tortillas seem OK.
Israeli Couscous goes down easy.
So progress is being made, I just have to pay attention to my weight. A tub of Baba Ganoush is in my future if I lose too much weight.
