2. There are a lot of checks on destroying the files

Monday

There are former prosecutors (Comey for one, who prosecuted Epstein at SDNY) and FBI agents who know what was in those files who would come forward if key parts are now missing.

Additionally, only a part of the files have been released by the Epstein estate with more to come and Trump has no idea what is or isn't in those files.
