What's for Dinner, Sat., Nov. 22, 2025

Shrimp burger. Creamy soy ginger sauce. Open-face on artisan bread.

Sweet potato fries.

Baby carrots and tiny filet green beans with tarragon herb butter.

Kombucha: apple cider-ginger.

Dessert: Cinnamon basil ice cream with an apricot-filled shortbread cookie.

We are going to my brother’s house to celebrate Thanksgiving with him and his family since they are going out of town tomorrow for a couple weeks. I made a plant-based version of the spanakopita recipe that is in the original Moosewood cookbook. I used Miyoko’s butter instead of the real thing, vegan feta crumbles instead of real feta cheese, and mashed firm tofu with nutritional yeast as a substitute for the cottage cheese. I’ve made this exactly the same way a few times and it comes close to the original recipe. There will be all kinds of side dishes and delicious desserts, enough to please everyone. Cheers! 🥂

Steak, onions, peppers and cheese leftovers from last night. A much smaller portion tonight.
Some corn chips with red pepper hummus.

If I want more later I'll have one of the Fiber One 70 calorie chocolate fudge brownies.

Marinated chicken and beef cubes with onions, red and green peppers and mushrooms grilled the balcony while watching the equatorial sunset. Salad of sliced cucumbers, diced tomatoes, red onion and parsley. grilled pita quarters with olive oil & garlic for dipping. Vino roja.

Apple kuchen arrived so I've sampled. Needs whipped cream!!!
A sucrée tart shell filled with rich jam, silky vanilla bean pastry cream, and a delectable homemade apple and cinnamon compote.

Hi, elleng!

We bought a small apartment in Panama for several reasons.

1. Diversity of assets as we had too much money in the volatile stock market. Real estate has been good to us.
2. We’ve been looking for a place to “snowbird” since it’s too cold in the NE for our old bones.
3. An escape plan if Trump pulled off his fascistic plans, (let’s have a private discussion about the Holocaust).
4. Fun!

It’s fabulous here and we are enjoying the equatorial life. We’re heading back to NYC on Monday but will return for the winter in mid-December.

Hope you’re well and Happy Thanksgiving! If you watch the Macy’s parade, the Landlady will be Linus on the Peanuts float.

How great!!!!

My folks did the equatorial life thing, when Westchester became too much. BIG hill in Katonah was too much, though most beautiful home ever. (They're both finally 'resting' with thousands of others, in FL.)

WILL look for Linus!!!

Weather here 'moderate.' Have a smoked turkey which will share with family some day around Turkey Day. THEY'll be in Ocean City. I'll likely gonna miss rest of family, which is in NJ (with some sadness) Prolly give Chanukah books (and one for a birthday) b4 Christmas.

P.S. MAY get this: The 2025 Beaujolais Nouveau is being described as fresh, fruity, and delicious, with notes of red berries like raspberry and cherry, and some wines showing subtle floral or citrus hints. It is considered a very drinkable and versatile wine, perfect for the upcoming holiday season. Despite a small harvest, the quality is excellent, resulting in wines with good balance, vibrant acidity, and a lighter-than-usual "bubblegum" character.

I used three boneless loin chops instead, easier to cook and eat. We also had roast butternut squash, stir-fried turnip greens, and grapefruit. Last week my husband brought me a huge squash when I only needed a cup or two of cubes. So I peeled and cubed the whole squash, and froze what I didn't need. I used this method https://www.thekitchn.com/frozen-butternut-squash-261647 , where you preheat your sheet pan and cook on the lowest rack. The squash came out pretty good, not quite as good as from fresh though. A Grüner Veltliner to drink.
