Cooking & Baking
Related: About this forumOur Thanksgiving will be lean compared to our usual tradition.
We don't want to leave our dogs this year or put them through the stress of travel, so we are staying home. The only daughter who lives in Texas is having a tonsillectomy just before the holiday and won't be traveling either. So we decided to keep it simple. I couldn't find turkey thighs this year and I refused to buy an entire bird just for myself--hubby is a vegan. So when I saw chicken leg quarters on sale, I bought a package, cooked them in the Instant Pot and shared the edible refuse with the dogs. I saved the fat to make gravy and used the broth for dressing (and gravy).
Though I didn't plan on the usual feast, I still ended up with 2 big pans of chicken and dressing. I put them in the freezer and I'll use one for Thanksgiving, one for Christmas, wherever that holiday finds us. I don't know why I didn't think of doing this ages ago. I like chicken better than turkey anyway and it's more readily available.
I have a vegan field roast for hubs that comes with its own dressing and gravy and I plan to roast a few sweet potatoes and serve them with butter and candied pecans. I have a pumpkin pie in the freezer. Along with a simple green salad, I thought that would be it for the dinner, but one of of my hubby's sisters took pity on us having to spend a quiet holiday at home alone (
) and decided she and her husband would join us. So now we are adding a Mediterranean spread to the traditional foods. Ok. I was ok with what we had, but it was nice of her to take pity on us?

(2,009 posts)I savored some exploration of Palo Duro Canyon and mixed in multiple jaunts to DFW and Houston. I mourned the death of my key client representative a while back.
So I have some means for conjuring up a Texas state of mind. Where do you abide?

(25,881 posts)travel, which can be a nightmare for everyone, being that the roads probably will be crowded, the weather will be funky (it is here in STLMO), and although my critters do like the travel sometimes, and especially when we get there), they still get stressed out and we would all rather stay at home, enjoy the fixings of our own homemade thanksgiving dinner (a dinner usually twice the number of things in a normal dinner, plus trimmings for the animals too, holidays you know).
Happy holidays to all of you.

Stressing him out with a road trip (he thinks all roads lead to the dreaded VET!) would shorten his already shortened days with us. Thank you for the holiday blessings. Hope you and yours have a peaceful and safe holiday as well.

(7,086 posts)I did a comparison of the price if I'd gathered ingredients to cook a meal for me and hubs... and decided that the grocery store's $39.99 price tag for a Thanksgiving Dinner for Two actually came out cheaper - and meant I didn't have to try to cook all the stuff! I'll probably still do a sweet potato casserole to add to the dinner... but I'm kind of glad it worked out this way.
Grandson has a (very) serious girlfriend and is spending Thanksgiving with her and her parents for the first time this year. I expect a marriage is coming up next year some time. So this will be an interesting experience for him! (LOL) He was a bit concerned about leaving us by ourselves, but I pushed him to go. Told him it was one of the "rites of adulthood" he just had to get thru! (LOL)

(24,473 posts)For the past 30 years, my wife has been Linus on the Peanuts float. She and her colleagues have to start at 5:00 am and they wont finish till noon so Im the cook.
Dinner will be roast turkey with stuffing and gravy, sweet and regular mashed potatoes, roasted Brussels sprouts and green beans. Various wines. Dessert is being brought and will be pumpkin and apple pies with vanilla ice cream.
Our guests will include her colleague (Charlie Brown), my former brother-in-law and his fiancé (I love this man!), the fiancés daughter who is a sommelier (guess whos bringing the wines!) and one of my oldest friends from high school.
Total budget = $150. Of course, there will be lots of leftovers for everyone.
Its one of our most enjoyable holidays and we dont intend to let any politics ruin it for anyone, (everyone is liberal, natch).
