Using up buttermilk today

I wanted buttermilk chicken. I only need about a cup of buttermilk and had my treat a couple of weeks ago. I made a small batch of buttermilk biscuits, too. But still have buttermilk to use up. I remembered I liked buttermilk pie and haven't made it for a long time. I was just going to make the filling, but decided to make the pie and share it with my family. I found a recipe for buttermilk spice cake in one of my old recipe books. I will carefully follow it and see what happens. (no temperature or bake time listed!) I noticed in some of the other recipes I used, that some of the ingredients are mentioned in passing in the instructions, so this will be a pleasant challenge. If it turns out, I'll donate most of it to the warming center for the local homeless. They said I could if I packaged it individually.

My other challenge is that the buttermilk was against the back of the fridge and froze solid. I think it'll be okay to use for baking, but I have to wait for it to thaw.

The buttermilk pie is just a custard pie made with buttermilk. It is also called oatmeal pie. I switched out chopped pecans for the oats (a garnish for the top). I don't like buttermilk,, but the pie is crazy good.

I enjoy baking, but we're all watching, carbs, gluten, something, something, something . I hope at least some of the people in the warming center will enjoy an old-fashioned treat

I have a chocolate buttermilk recipe, too.

I know what you mean about watching calories, sugar, something something something. 🙂. I have three grown sons to help eat up whatever I bake. Husband watches what he eats so not much help there.

Every other week when my out of town son comes for dinner I have to send him home with a batch of cookies. 🙂

I made a confectioner's sugar glaze for the cake and cut it into pieces that fit in a cupcake cup.

The pie seemed a little sweet from what I remembered, but it's a nice treat. I rolled out the scraps leftover from the crust, cut it into strips, and sprinkled them with sugar and cinnamon/ My Gram and my Mom used to do that when they baked pies. A little trip down Memory Lane
