Another beautiful fall day, but the plumber is still working so I have no water. Doesn't matter--I stocked up on easy things to fix in the event of a block of time with no water. Consequently, tonight's dinner is:
Impossible burger as an open face sandwich over whole wheat. Lettuce, provolone, and caramelized onion on top.
Onion rings with ketchup, fixed in the air fryer.
Cherry tomatoes.
Kombucha: cherry-ginger.
Dessert: chocolate ice cream.

This is the one that justaprogressive says is the only frozen pizza worth buying.
Also, in answer to a DM, I have hot and cold water all the time--just for a few hours a day while he is putting in new pipes is it turned off.

(6,594 posts)I couldn't make it through the crust (sigh). I noticed today at the store, tho, they've now got the pizzas in "bowls"... everything but the crust. I'm gonna check one of those out next payday.
We turned really cool and rainy today. Knowing I'd be at the doc's office all afternoon today, I made a nice pot of chili last night for supper, thinking we'd have the leftovers tonight. Knocked my socks off... it was an EXCELLENT pot of chili! So good, in fact, there's not enough for a repeat tonight. So... to the store for a bit more burger and beans and greens to add to it to make it enough. I hope this bodes well for my soup making this winter!
I desperately want a good, spicy, flavorful black bean soup recipe. I've gathered a few together and hope to try some out as the weather cools. There's nothing like a good bowl of soup on a cold day! If anyone has a recipe they really like, I'm sure open for all suggestions! Also doing the same with tomato soup... My goal is to become a great soup maker by the time I turn 70 next Feb. Secrets and hints and wild suggestions are welcome!

(21,878 posts)I was on a low carb diet, so I sliced fresh mushrooms into the bottom of a small sheet pan, then topped with pepperoni slices, peppers, onions, garlic, shredded Mozzarella cheese and pizza sauce. Or just spices. Baked at 400 until everything was tender, cheese melted. Scored it into servings and scooped it out. It was good and I didn't miss the crust
My friend showed me how to make skinny pizzas, using burrito wraps. Lay them out on a flat pan, spread some tomato paste on them and then other toppings. Hers were just cheese, but I've made them with pepperoni.
Another oldie, but goodie is pizzaburgers. Lay an 8 pk of buns out on a large cookie sheet, opening each bun and laying the tops and bottoms side by side to fill the pan. Lightly brush with olive oil and set aside. Brown a pound of ground beef, add some onion, garlic, basil, s&p, chopped pepperoni (all to taste) When the meat is cooked, drain and add a small jar of pizza sauce and mix. Preheat the oven to 350. Spread a spoonful of the meat sauce on each bun, using it all. Use an 8 oz bag of shredded Mozzarella cheese and sprinkle some on the top of each. Bake at 350 until the cheese is melted. Really good.
Last year, I saw a video where you lay the toppings (for me, shredded Mozzarella and sliced pepperoni) in the bottom of a warming skillet, then lay a burrito shell over them. I lightly brushed the burrito with some oil. Cook over medium heat, for 1-2 minutes, then flip and let it heat for another 30 sec to 1 min. They don't take long. At this time, you can put a little pizza sauce on it, but I just use dry spices. Slide it onto a plate and roll it up. They are easy to eat, with a nice texture.
I rarely get pizza, even thought I love it, but even a small one is a lot for me. Any of these are a good fix

(6,594 posts)I can make Quesadillas out of anything in the frig or pantry! (LOL) These days, we're basically doing that, too... what with the prices going sky high on everything. Just as I really got into the "Living Basil" plant the price jacked up to $7.00 for a single plant. But Penzeys and I are becoming fast friends!

I don't know if this alternative is for everyone. I got into foraging wild food a long time ago, then moved to town and didn't keep up with it. There are a lot of young people on facebook reels who are doing videos of foraging for wild plants, heck, even domestic plants that you wouldn't think are edible. I'm refreshing my memory and learning some new things. With the price of food, I might get back into it.

(6,594 posts)like way before I was 10 yo. He was a Depression-era kid, so he knew a lot about foraging.. and he LOVED hunting for mushrooms. I've got more than a few well-used books on herbs and plant life that I bought for rituals, making incense, etc. I think I'll dig those out and see if there are the appropriate culinary aspects to the books, as well. Thanks for the reminder!

I clicked into Mollie's site earlier today and liked what I saw. Linked to it from my bookmarks section on my browser start page. Dinneratlulus.com is also a great site for soups. I guess it's a function of getting older, but it takes a bit more herbs and spice to make it through my taste buds... either that or I burned the crap out of them with all the Tex Mex I'm addicted to! And believe it or not, I just discovered Sofrito. OMG! LOL!

(36,756 posts)The crab is leftover from the stuffed mushrooms I cooked on Sunday, as is the rice. I'll probably stretch the crab a bit with some leftover salmon. There are a couple small crab stuffed mushrooms left-- I'll microwave those too. With tartar sauce and/or lemon wedges.

(1,571 posts)In a large mixing bowl I added: sliced celery, chopped green pepper, chopped red onion, sliced cauliflower, scallions, sweet potato cubes and minced garlic. I added some evoo, onion flakes, dried oregano, red pepper flakes and s&p. I tossed everything and poured it into a large baking pan. Baked for 70 minutes at 400 degrees. Cheers!🥂
