Coconut Shrimp with Pineapple Chili Sauce.
I love coconut shrimp and have made it the same way for years, but tonight I think I'll make it with pineapple chili sauce. This sauce has Thai sweet chili sauce, ginger, garlic, soy and a little brown sugar combined in pineapple juice.
I found this recipe in the You Got This cookbook by Diane Morrisey. Diane used to be an executive with Whole Foods in the NY/NJ/CT area and supervised the prepared foods part of the business. I think that includes the buffet, where I often get inspiration. I like to make my own versions, though, using freshly picked produce from my garden.
For a salad, chopped green ruffly and red tip with tomatoes, green pepper, and red onion. Cucumber, too.
Mixed up a gallon of kombucha this morning.
Dessert: I picked up a carrot cake and much to my surprise: NO WALNUTS. Huh? So I will toast walnuts and sprinkle them over the top with a little vanilla ice cream if I want dessert, which is debatable at the moment. It's really too hot here to have much of an appetite.

No, did not include Asian style salad. I layered the strips on top of a pita bread added greens and spooned tahini sauce. Then folded the pita like a taco. Delicious

(24,181 posts)Legs and thighs covered with flower with secret spices that put the Colonel to shame! In the Granpas huge cast iron pan, fry the pieces in bacon grease (I know but we cook this only a couple of time a year) turning when appropriate. Remove and drain when the thighs are golden brown all over.
Mashed potatoes, gravy and a salad of Romaine, cuumbers, carrots and red onion rings. Oil and vinegar on top.
Fresh locally baked donuts for dessert.

Tonight it is
Cabbage (tired looking & gotta be used)
Split peas (a small portion remaining in a bag in the pantry)
Onion
White potatoes cubed
Better than bouillon, ham flavored
Garlic
Salt
Pepper
Thyme
Filling and tasty

(1,831 posts)We got some paneer at Costco last week when we visited our younger son, so this is what I made with the first chunk. If anyone has suggestions for further uses, I'm all ears. Recipe was a little twiddly but not to difficult and came out pretty well.
I thought about making apple crisp with apples bought at the farmers market today, but glad I didn't, because we're stuffed now.
It is like fall here right now, quite cool for this early in September.

(1,547 posts)Steam-fried in evoo and veggie broth: chopped onion, red bell pepper and minced garlic. After sweating them I added cut green beans and just before they were soft I added sliced mushrooms, red pepper flakes and chopped fresh parsley. To finish I tossed in air-fried crispy tofu cubes, cooked whole wheat penne, and a dollop of Miyokos butter. TJs vegan parmesan on top. Cheers! 🥂
