Swedish, Danish Scandi Fish Dish! 🌞

Horseradish-Marinated Salmon with Potato Pancakes



Serves 4

50 g (2 07) parsley leaves
2 tablespoons Swedish (sweet, strong)mustard
2 1/2-84dl (1-1 1/4 cups) sunflower seed oil
50g (2.oz) grated horseradish
4 pieces salmon fillet, about 180 (6oz) each
salt, pepper

Potato pancakes:

800 g (11 07) cold botled potatoes
eggs
1l (1/2 cup) milk
1/2 dl (1/4 cup) flour
1/2 teaspoon salt
white pepper
3 tablespoons finely chopped chives
5 g (3 oz) Kvibille Graddadel or other blue cheese
butter

1. Purée parsley and mustard in a blender;
food processor. Add oil in a thin stream.

2. Thin, if necessary, with a little cold water.
‘Add the horseradish. Season with salt and
pepper.

8. Pour the marinade over the salmon.
Marinate several hours

4. Grate the potatoes on the coarse side of a
grater. Mix with eggs, milk, flour, salt,
pepper and chives to a smooth batter.
Cut the cheese into small dice and add.

5. Heat the butter in a skillet. Make small
pancakes and cook on both sides until
golden,

6. Preheat the oven to 150°C (30°F).

7. Grillthe salmon in a non-stick pan over
medium heat several minutes. Bake in the
oven 5 minutes,

8. Serve the salmon and potato pancakes with
a vegetable ragout and white wine sauce, if
desired. Garnish with grated horseradish,

Comment:
I have served the salmon with a ragout of
zucchini, eggplant, bell peppers, red onions,
oyster mushrooms and olive oil along with a
white wine sauce flavored with white pepper.

Danish Torsk Cod Fillets



The popular Torsk dish is made with cod fillets that are broiled & buttered.
You’ll use frozen fish, and you don’t need to defrost it before using it.

Makes 6 Servings
Cooking + Prep Time: 35 minutes


Ingredients:
6 x 6-oz. cod fillets
6 cups of water, filtered
1 cup of sugar, granulated
2 tbsp. of salt, kosher
1 & 1/2 cups of melted butter, unsalted
A dash of paprika, sweet

Instructions:

Preheat the broiler. Grease a baking sheet lightly.
Place fish in large pan.

Mix water, salt & sugar together in medium bowl
and pour over fish. The fish should be covered fully.
If it’s not, just pour in additional water.

Bring water to boil on med-high and boil for three to five minutes.

Remove fish from the water. Pat with paper towels, removing excess.

Brush using 6 tbsp. of melted, unsalted butter. Use paprika to sprinkle.
Broil fish for 8-10 minutes for each 1” thickness, till fillets have turned
golden brown in color.

Serve along with the rest of the melted butter
