Stuffed pattypan squash, zucchinis, and peppers (gold and green). The chopped squash, carrots, onions, garlic, toasted almonds and ground chicken is what's in the stuffing. Also couscous. Tomato sauce over the top, along with melted Jarlsburg.
Cherry kombucha.
Dessert is a triple chocolate Bundt cake (I bought it, didn't make it myself). and vanilla ice cream.

(36,716 posts)The plantains I cooked last week were awful, they turned woody before ripening. They were edible, but not particularly tasty. Didn't have much taste at all, so I'm trying again with fruits from a different grocery. K and I will split a steak, we just don't eat as much as we used to.

(1,547 posts)Steam-fried in evoo and veggie broth: chopped onion, red bell pepper, broccoli florets and minced garlic. I added air-fried tofu cubes and sliced mushrooms and cooked for a few more minutes. When done I stirred in a sauce I made of soy sauce, rice vinegar, sugar, hoisin sauce, corn starch and water. Served over brown rice with a final sprinkle of chopped scallions. Cheers! 🥂

(11,271 posts)that is, frittata made with leftovers: eggs, yogurt, mashed sweet potatoes, steamed brocollini. Could use another spice note, maybe some hot peppers, but not bad. I'm trying to use up as many leftovers as possible. And there's frittata leftover for breakfast tomorrow!
