Dehydrated tomatoes. Going to have to give some background.
Every year in our compost pile, tomato plants volunteer to offer us a small bounty of whatever kind of tomato they want. The greenhouse is right next door to the pile so my wife has no problem hitting it with her unwanted tomatoes from the plants. I now save the seeds from the compost tomatoes to start in the spring.

Couple years ago we had a ton of volunteers and lots of tomatoes that were on the cherry tomato size. We had a ton of Romas coming in and I started dehydrating the volunteers trying to make tomato powder. Didnt feel right not to do anything with em. Packed them up in Mason jars, made a rice bag for desiccant and put them away. They tasted like tomato candy but I was in a lurch trying to figure out how to use them in cooking
the powder idea didnt work. They were like leather and the grinder wouldnt break them up.
Dehydrated tomatoes from a quart mason jar on a quarter sheet. Most if these slices are about the size of a quarter.
Later in the season while processing the Romas into sauce which can be an all day project getting that consistency just right
I decided to throw in some of the dehydrated cherry tomatoes. Whipped that through the food processor and got the thickest, sweetest sauce Ive ever made.
It was like they were dry tomato paste. Went on a rampage from there

(13,390 posts)Big Ugly and Roma. They are the perfect tomato for sauce, big meaty and sweet. I've been saving the seeds and getting good results for a couple of years.

my wife love to grow all different kinds in the greenhouse..we have no idea what strain could be coming. Plus she grows hybrid plants so it mixed right off the bat. Bees cross the plants while growing up in the compost. What a lovely crap shoot.

(72,956 posts)makes a nice thick sauce w/o cooking all day. i actually put dehydrated cherry tomatoes in my xmas cookies. (pro tip- cut in half or pierce the skin.)
i love my dehydrator. u can make chips out of carrots, zucchini, etc. slice thin, toss in a little oil, salt, maybe garlic or hot pepper, et voila, a crunchy, healthy snack.
onions come out very sweet as well. if u get a nice sweet, like a vidalia, theyre almost like candy.
i bag this stuff and toss them in the freezer, but some rice is a good idea, too.
