I don't think you will have missed out on too much of the back story if you go see Episode VII without seeing the prequels. Beyond mentioning Anakin/Vader there really isn't any mention of any of the stories or characters from the prequels.

That said I think having seen the prequels may raise one's appreciation for the work JJ and crew did on Episode VII.
